100% Sauvignon grape variety is used.
Our Pouilly-Fumé "Cuvée Prestige des Fines Caillottes" is produced from grapes from our oldest vines (40 years old and certain even older) located near the village Les Loges, on very pebbly limestone-clay terroir (at times up to 50% pebbles).
An exceptional ripeness is obtained on this terroir. The very deep roots of the old vine stocks and reduced yields make the wine produced from these old vines beyond comparison.
Our "Cuvée Prestige des Fines Caillottes" is produced with grapes from only the best vintages.
Presentation of the wine in video
After partial skin maceration, the temperature controlled fermentation (16-20°C) is performed by wild yeasts in stainless steel tanks. It is matured on fine lees (fermentation residue) the pumping over of these lees lasts several months before bottling.

FOOD AND WINE MATCH :
La cuvée "Prestige des Fines Caillottes" may be enjoyed by itself as an aperitif. It goes wonderfully well with dishes such as chicken in sauce, fish, rabbit etc. and mild cheeses.
SERVING ADVICE :
Serve at around 10 - 12°C. Drink within 5 years after the harvest to taste the youthful aromas. It can, however, be kept long after.
