LE DOMAINE DES FINES CAILLOTTES

Our Pouilly-Fumé "Domaine des Fines Caillottes" is a blend of wines coming from the range of our terroirs with different micro-climates and different aged vines making up our estate.

100% Sauvignon Blanc grape variety is used.

VINIFICATION :

After partial skin maceration (depending on the vintages), fermentation in thermoregulated stainless steel tanks takes place (16 - 20°C) with wild yeast naturally found on the grapes. The maturing on fine lees and the stirring of lees lasts several months. The blending is done before the bottling.

TASTING :

POUILLY-FUME "Domaine des Fines Caillottes" 2016 :
Pale gold with brilliant highlights. Intense nose with notes of citrus and white fruits (peach...)
Complex, rich and saline palate with good balance showing aromas of ripe fruits (pineapple, citrus fruits, peach...). An intense and aromatic Pouilly Fumé.

FOOD AND WINE MATCH :

Our Pouilly-Fumé "Domaine des Fines Caillottes" is delicious by itself as an aperitif. It is excellent served with most hors d'oeuvres and appetizers, seafood, fish, and certain cheeses like goat cheese in particular.

SERVING ADVICE :

Serve at around 10-12°C. Drink during the 4 years following the harvest to fully appreciate the freshness and the youthful aromas. It can be kept long after with a slow evolution of the aromas.
