Our Pouilly-Fumé "Domaine des Fines Caillottes" is a blend of wines coming from our mosaic of terroirs
and micro-climates among the best terroirs of Pouilly-Fumé.
100% Sauvignon Blanc grape variety is used.

The harvest is destemmed and delicately transported by conveyor in our pneumatic presses to be
gently pressed (after partial skin maceration) in order to extract the fruit as best as possible.
After a very clear sedimentation (for a lot of finesse), thermoregulated fermentation takes place (16 - 20°C) with wild yeast
naturally found on the grapes in stainless steel tanks (as neutral as possible to let the terroir speak).
The maturing on fine lees and the stirring of lees lasts several months. Finally the blend of our different terroirs (until there separated)
allows to add compexity and to bring the qualities of each.
POUILLY-FUME "Domaine des Fines Caillottes" 2017 :
"Brilliant light yellow. Expressive nose of citrusfruit especially grapefruit, blood orange and then apricot.
With these same aromas, we discover a rich mouth, well balanced, lightly saline with a very long finish.

FOOD AND WINE MATCH :
Our Pouilly-Fumé "Domaine des Fines Caillottes" is delicious by itself as an aperitif. It is excellent served with most hors d'oeuvres and appetizers, seafood, fish, and certain cheeses like goat cheese in particular.
SERVING ADVICE :
Serve at around 10-12°C. Drink during the 4 years following the harvest to fully appreciate the freshness and the youthful aromas. It can be kept long after with a slow evolution of the aromas.
